A silky smooth chocolate pot is the ultimate dessert for any sweet tooth. Traditionally, it is made with heavy cream, white sugar and eggs – and of course chocolate. You know my obsession with turning desserts plant-based and making them a little bit healthier, so I started to experiment with vegan chocolate pot recipes. Many taste tests later, I have found my favourite combination of ingredients which makes the dessert perfectly indulgent and satisfying without being too heavy. There’s a wonderful secret ingredient included I always like people to guess. Hardly anyone finds out, as it’s not predominant in taste or colour, but gives the amazingly silky finish. 1 avocado
30g extra dark chocolate (min. 70% cocoa solids)
2 heaped tsp cacao powder
1,25 dl coconut milk
3 tbsp maple syrup
1/2 tsp vanilla paste
splash of water

- Peel and carefully destone the avocado. Cut into rough chunks and put into your food processor or strong blender (I use a NutriBullet).
- Slowly melt the dark chocolate in a small saucepan.
- Meanwhile, add the cacao powder, coconut milk, maple syrup and vanilla paste to the food processor.
- Pour in the melted chocolate.
- Pulse on high speed, giving it a stir in between to make sure everything is well incorporated. If the mixture isn’t creamy enough, add a splash of water and mix well.
- Transfer the mix into 2 glasses and place in the fridge for at least 2 hours to chill.
- After the pots have chilled in the fridge, decorate them with whatever you fancy: berries, cacao nibs and cacao powder being my favourites, but any fruit works really. Share and enjoy!
Optional:
Not a big fan of avocado? It might be the consistency that freaks you out most, but for this chocolate pot it’s exactly what we need. If you’d rather use less avocado in this recipe, I’d recommend using half an avocado and add a big, very ripe banana. The banana will add a lot of sweetness, which is why I would leave out the maple syrup and taste test after blending in case it needs some sweetener or not.
No blender or food processor available? No problem, it also works well with a strong stick blender. You can even use it as a workout and go for arm strength only: mash the avocado very finely with a fork, sieve in the cacao powder and add the rest of the ingredients with a whisk.
Fan of playing with consistency? I’m totally here for it, because I love mixing crunchy and smooth, creamy and crumbly. Be creative and add some raspberries or chunks of pear for some juicy freshness. For a crunchy element, crumble up biscuits, crush some roasted almonds or stir in some cacao nibs.
