The less perfect a chocolate chip cookie looks, the better it is, right? Vegan cookies can be super dry and disappointing and often also full of sugar. I’ve been experimenting with different recipes for a while in order to create a healthy and incredibly delicious cookie. This version finally made me very happy. To replace the egg, I use apple sauce, which gives it a subtle tartness without being overpowering. I always love having friends guess the secret ingredient I used, apple sauce has not been found out yet though!
This recipe is perfect for a quick fix: no faffing around, no strange ingredients, and it takes you less than 30mins from getting the bowl ready to biting into a soft, fluffy cookie.
3 tbsp coconut oil, melted
20g coconut sugar
pinch of salt
1/2 tsp vanilla paste
2 tsp cold water
1 tsp maple syrup
60g apple sauce
70g spelt flour
1/2 tsp baking powder
40g dark chocolate chunks (min. 70% cocoa solids)
makes roughly 7-8 cookies
- Preheat the oven to 175°C and line a tray with baking paper.
- In a medium sized bowl, mix the coconut oil, coconut sugar, salt, vanilla paste, water and maple syrup really well until the sugar has dissolved.
- Pour in the apple sauce, give it another quick mix.
- Add the spelt flour and baking powder and stir until just combined.
- Mix in the chocolate chips until they are spread evenly. Careful, don’t overmix the batter!
- Use 2 teaspoons to form walnut-sized cookies and place them on the baking tray. They won’t spread too much, so don’t worry about leaving much space between them.
- Bake for 10-11mins, until they’re slightly golden. Share and enjoy while still a bit warm.
Optional:
If you don’t have any coconut sugar at home, you can use raw cane sugar. Keep in mind that the cookies will be a little bit sweeter though.
In case you don’t want to use coconut oil, feel free to swap with any other flavourless oil, sunflower or rapeseed oil work well in this recipe. Don’t use olive oil, its flavour is too intense for these cookies.
